Lamb stew

Winter has begun and the cold weather is here.
The water in the chicken coop was frozen yesterday and I had to place another garden cloth over the remaining arugula.
We have rosemary from the garden, so perfect for lamb stew.
Saute'ed up one diced red onion, browned 1 lb. of ground lamb, and added one large chopped garlic clove just before adding 6 cups of chicken broth. Added a peeled and diced sweet potato, then salt, pepper, rosemary, thyme, and a dash of cayenne pepper.
 Let cook on the stove until the sweet potato pieces were soft. Adjusted spices with more salt, pepper, rosemary, and a quick dash of garlic powder. 
Just before serving added 2 large handfuls of baby spinach and gave a stir until wilted.
Whipped up a quick pot of instant mashed potatoes.
Served yummy warm bowls of lamb stew with large dollop of mashed potato floating on top.
Of course our son had an extra bowl of mashed potatoes with shredded cheese on the side.

Dinner tonight: chicken, wild rice with pecans and dried cherries, sweet potato puree (sweetend with maple syrup). Fresh garden carrots too.
